3 quarts sweet cider
8 LBS ripe apples, peeled, cored & quartered
1-1/2 C brown sugar, packed
2 tsp. ground cloves
1 C molasses
2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. salt
In a large pot, cook the cider uncovered over high heat until it is reduced by half. Add apples; reduce heat to low and simmer until tender. Puree mixture in a food processor; return to cooking pot. Stir in sugar, spices and salt. Cook over low heat, stirring constantly, until mixture thickens. Ladle mixture into heated and sterilized jars; seal. Recipe makes about six pints.
Uses: Apple Butter can be spread on buttered toast, used as a side dish accompaniment, an ingredient in baked goods, or as a general condiment.
