1/4 LB bacon slices, chopped
1 ripe avocado
1/2 tsp. lemon juice
Salt & pepper to taste
3 TBS butter, softened
4 large slices whole wheat bread
Parsley sprigs for garnish
Fry bacon until crisp; drain on paper towels. Peel the avocado but do not remove the bright green flesh just inside the skin. Cut avocado in half and remove the seed. In a bowl, mash avocado; stir in lemon juice, salt and pepper. Butter two slices of bread, and spread the avocado mixture on buttered sides of two bread slices. Sprinkle bacon over avocado, and cover with remaining bread slices, buttered sides down; press together. Cut off the bread crusts.
Cut each sandwich into four triangles. Arrange on a serving plate, and garnish with parsley.
