3 C (12 oz.) sharp cheddar cheese, shredded
1 (8 oz.) container chive-and-onion flavored cream cheese, softened
1 (4 oz.) jar diced pimiento, drained
1/2 C toasted pecans, chopped
24 whole wheat or pumpernickel bread slices
In a bowl, combine the cheddar cheese, cream cheese, pimiento and pecans. Using a bat-shaped cookie cutter, cut two "bats" from each bread slice. Spread two tablespoons of filling over twenty-four bat cut-outs. Top with remaining twenty-four bat cut-outs. Recipe makes about twenty-four sandwiches.
