2 LBS lean stewing beef
2 large onions, sliced
6 medium carrots, sliced
2 TBS flour
Fat or beef drippings
1/2 C dry cider
1 C Guinness with water
Sprig of parsley
Cut the beef into chunks; peel and slice onions and carrots. Toss the beef in flour. In a pan, brown the beef quickly in hot fat. Remove beef and gently fry onions until transparent.
Return the beef to the pan, adding carrots and the liquid. Bring to a boil; reduce heat to a gentle simmer. Cover and cook for 1 1/2 - 2 hours. Check that the dish does not dry out, adding more liquid if necessary. Sprinkle with chopped parsley and serve with plainly boiled potatoes. Serves four.
