Classic
1 dozen eggs, scrambled
1 LB bacon, chopped, cooked & drained
1 LB hot sausage, fried & drained
2 large potatoes cooked in the microwave, peeled & shredded
1/2 small onion, chopped
1 small can mild green chilies
12 large flour tortillas
Shredded cheddar cheese
Salsa
Cook sausage, bacon, and onion together. Drain and return to skillet. Add beaten eggs and cook until done. Pour in green chilies and shredded potatoes; heat thoroughly. On a griddle warm large size flour tortillas. Fill the tortilla with a soup ladle amount of filling, add cheddar cheese to suit your taste. Roll the tortilla into burrito shape; wrap in foil or eat immediately. Can be topped with salsa for added taste.
