4 oz. cheddar cheese, grated
3 TBS. milk
Dash of mustard
1 tomato, sliced thin
Salt & black pepper to taste
In a bowl, mix together the grated cheese, milk, mustard, salt and black pepper. Spread evenly and thickly over bread slices. Place on a flat cooking pan or cookie sheet. Broil until bubbly and starting to brown. Slice the tomato thinly, and place one slice on each piece of bread.
*Trivia Note: When served with a poached egg on top, Welsh Rarebit is also known as Buck Rarebit.
