Eggs & Peppers
1 C egg whites
1 TBS olive oil
1/2 C red & green bell peppers, chopped (sub with packaged frozen)
1/4 C onion, chopped
Salt & black pepper to taste
Warm olive oil in s skillet over medium heat. Add chopped peppers and onion; sauté until soft, stirring occasionally. Pour in egg whites. Cook for a few minutes, stirring constantly, until eggs are set. Slide onto a plate, add salt and black pepper to taste. Serve.
