6 slices of bacon
1 TBS butter
1 onion, chopped
4 potatoes, peeled & finely diced
1/2 tsp. salt
Black pepper to taste
1/4 C milk
In a skillet, cook bacon until crisp. Remove and drain on a paper towel, then chop. Clean bacon fat from the skillet; add butter and onion and sauté until soft. Add the potatoes and brown. In a bowl, beat eggs; add salt, black pepper to taste and milk. Stir chopped bacon into the mixture; then pour egg mixture over the onions and potatoes, stirring occasionally until eggs are cooked. Serve hot.
