1 LB fresh button mushrooms
1 beaten egg
Cracker crumbs
Salt
1 C shortening (Crisco)
Rinse the mushrooms under cold water, then dab with paper towels to dry. In a small bowl, beat one egg. In another bowl, mash crackers into crumbs. Dip mushrooms in the beaten egg, and then into the cracker crumbs. In an electric skillet, preheat 1 cup of shortening (Crisco) until it reaches 375 degrees F. Fry mushrooms until they are brown on all sides, and then drain on paper towels.
