1 LB sauerkraut
6 C beef both
1/4 LB. bacon, diced
1 large onion, diced
2 TBS flour
3 TBS cold water
Salt & black pepper to taste
Rinse the sauerkraut well with cold water; chop fine. In a skillet, cook sauerkraut in a small amount of boiling water for a few minutes. Reduce heat, cover, and simmer for about thirty minutes. Add the beef broth. In another skillet, fry bacon with diced onion until translucent. Sprinkle in the flour, and cook for a few more minutes, stirring. Thin with 3 tablespoons of water; add to the sauerkraut mixture and bring to a boil. Season with salt and black pepper to taste; mix well.
Suggestion: Serve with boiled red potatoes.
