Food Fare: Basque RecipesMarinated Anchovies

Tear the heads off the anchovies, and run your fingers along the spine to remove all the innards. Remove the bone. Rinse the fillets under cold running water, and then spread them out on a paper towel, patting them dry. Place the anchovies in a single layer in a shallow, microwave-safe dish. Combine the lemon juice, sherry vinegar, salt, pepper and water in a small bowl, and pour over the anchovies. Cover with plastic wrap and place in the refrigerator to marinate for two hours. Drain the marinade, and drizzle olive oil (to taste) over the anchovies. Serve them in salads, with roasted peppers, hard-cooked eggs or on toast.
