Mushroom Broth with Brown Rice
1 can (16 oz.) vegetable broth
2 C water
2 C fresh mushrooms, sliced small
1 C snow peas, trimmed and cut in half
1 C raw, quick-cooking brown rice
1 TBS soy sauce
Pepper to taste
In a large saucepan, combine the broth with two cups of water. Bring to a boil. Slice the mushrooms. Prepare the snow peas and green onions. When the broth and water comes to a boil, add the mushrooms and rice. Lower the heat to medium and simmer for five minutes. Add the snow peas, green onions and soy sauce. Simmer for another five minutes, then season to taste with pepper and serve.
