Vegetable Pancakes
1/2 small green cabbage, shredded
1 large carrot, shredded
1/2 onion, diced
3 stalks celery, minced
2 C whole-wheat flour or white flour
1 egg, beaten
2 TBS brown sugar
1 tsp. salt
1 (10 oz.) can evaporated milk
Water to make a batter
1/2 C leftover meat (beef, chicken or fish to preference)
Non-stick cooking spray
In a large bowl, mix the vegetables. In another bowl, combine flour, egg, brown sugar, salt, evaporated milk and water to form a smooth, pourable batter. Mix the vegetables in the batter. The mixture should have a consistency that allows spooning onto skillet. If not, adjust with more flour or water. Coat a skillet with non-stick cooking spray. Drop spoonfuls of batter (3 TBS per pancake) on skillet set on medium heat. Brown pancake well on one side; flip over and brown the other side. Serve hot or cold.
