1 1/2 LBS baking potatoes, peeled
1/2 C onion, grated
1 garlic clove, minced
1/2 C egg substitute
2 egg whites
1/2 C unsalted matzo meal or all-purpose flour
1/4 tsp. salt
1/4 tsp. pepper
Grate the potatoes into a bowl, and mix with the onion. Stir in the garlic, egg substitute, egg whites, matzo meal or flour, salt and pepper. Spoon mixture into an 8"-square baking pan that has been coated with non-stick cooking spray, and bake at 400-degrees F for forty-five minutes, or until golden. Serves four.
