Pumpkin French Toast
1/4 C canned pumpkin puree
1 tsp. cinnamon
1 pinch nutmeg
8 slices white or whole wheat bread
2 tsp. butter
In a bowl, beat together eggs, pumpkin, cinnamon and nutmeg. Dip bread slices into pumpkin mixture until coated on both sides. Melt one teaspoon butter in a large skillet over medium-high heat. Place four bread slices into skillet and cook until browned on both sides, about three minutes per side. Repeat with remaining bread and butter. Serve at once.
