From R.W., re: garlic varieties, Garlic Galore
Mildest garlic: Elephant garlic is said to be the mildest. Would you please recommend a couple of other varieties that would be close to elephant in mildness? Thanks.
[Reply]: There is a web site called Gourmet Garlic Gardens that claims Red Toch and Simoneti (artichoke-type garlic) are very mild in flavor, as well as China Rose. Other mild varieties include the Silverskin garlic Burgundy (mild with a slight undertone of heat); and the Porcelain-type Brown Tempest is considered mild when cooked.
