2 LBS. carrots
Butter
2 TBS. chicken stock
Mint (fresh or dried)
Salt & pepper to taste
Fresh Parsley
Scrub the carrots, and chop them in three pieces lengthwise. Then slice each piece in half, or in quarters, through the center of the carrot. Put the carrots in a baking dish, add the butter to taste. For a healthier dish, add just a little butter and the chicken stock. Add the mint, salt and pepper (again, to taste). Bake covered in a 350-degree F oven for about an hour (stir a few times during cooking). Serve with chopped parsley and a roasted meat dish.
