Greek Spinach Pie
1 LB Feta cheese, grated
1 LB fresh spinach, chopped
1 pkg. Phyllo dough (or prepare homemade)
10 eggs, beaten
8 green onions, chopped (use greens)
2 tsp. dried dill
Break the eggs in a bowl. Grate the Feta cheese; mix with the eggs. Chop the green onions and spinach in a separate bowl; add dill. Stir in 1/4 cup of olive oil; add to egg-cheese mixture. Grease the bottom of a baking dish with olive oil. Place two sheets of Phyllo dough on the bottom of the baking pan. Pour more olive oil over the Phyllo. Place another layer of Phyllo and repeat procedure. Place filling on top; spread evenly over Phyllo. Layer more Phyllo on top; pour remaining liquid from filling over Phyllo. Bake at 400-degrees F for about twenty minutes.
Suggestion: Serve with cubes of Feta cheese (as pictured above).
