Pan-Fried Spinach with Bacon
2 slices bacon (sub with turkey bacon)
1 garlic clove, peeled & crushed
2 pkgs. (10 ounces each) frozen-leaf spinach, thawed
Salt & pepper to taste
Vinegar (for serving)
In a large pan, fry bacon until crisp; remove and drain bacon. Cook crushed garlic in remaining bacon fat until tender. Press water from thawed spinach, using paper towels or an old dish cloth. Add spinach to bacon fat; cook and stir for about one minute. Cover skillet and cook an additional thirty seconds. Season with salt and pepper to taste. Serve with vinegar as a condiment.
