Fried-Cheese Pancakes
1 C cottage cheese
2 eggs, beaten
3 TBS sugar
2 TBS semolina flour
3 TBS all-purpose flour, plus extra for dusting
1/3 C canola oil for frying
In a bowl, combine cottage cheese, eggs, and sugar. Stir in semolina and all-purpose flour; work into a soft dough. Turn dough onto a floured surface, and then roll into a 1-inch thick log. Slice the log into eight pieces; pat each piece with additional flour to form a patty. In a deep-sided frying pan, heat oil over medium heat until hot. Fry the Syrniki in hot oil until golden brown on each side, three to four minutes per side. Serve.
