Tuna Rice Cakes
1 can (6 oz.) water-packed tuna, drained
2 TBS sweet pickle relish
1 whole scallion, thinly sliced
1/4 C low-fat mayonnaise
1 tsp. brown mustard
Salt & black pepper to taste
2 large lightly-salted rice cakes (Quaker or generic brand)
In a bowl, combine the tuna, pickle relish, scallion, mayonnaise, mustard, salt and black pepper. Mix well. Spread mixture on top of two rice cakes and serve.
Note: Double or triple recipe for a large gathering.
Variation: Substitute tuna with canned chicken-in water instead.
