Shredded Roast Beef
4 LBS boneless beef chuck, cut into 1" cubes
1 QT water
2 TBS salt
3 cloves garlic, finely minced
1 C onion, sliced
White rice (for serving, optional)
In a large saucepan, combine all of the ingredients. Cover and bring to a boil, then lower heat. Simmer for about two hours, or until meat can be shredded with a fork. (Add more water if necessary to keep the meat simmering). Shred the meat by cutting it into thin strips. Place the shredded beef and liquid from saucepan into a large baking pan or oven-proof casserole dish, and roast at 400-degrees F for about thirty minutes, or until browned on top.
Suggestion: Serve with white rice.
