Sautéed Vegetables
2 TBS olive oil
1 onion, thinly sliced
4 cloves garlic, minced
1 red pepper, cleaned & thinly sliced
1 C snow peas, ends snipped off
1 medium zucchini, thinly sliced
1/2 C white wine
1/2 C half-and-half cream
Salt & pepper to taste
Wash and slice the vegetables, making sure to scoop out all of the seeds and white parts inside the red pepper. Pour the olive oil into a large frying skillet. Add the onion, garlic, red pepper, snow peas and zucchini. Mix well. Cook over low heat, stirring frequently, until the vegetables have a light golden color. Stir in the wine. Continue cooking over low heat until the wine has evaporated. Add the cream, salt and pepper. Stir for another minute, and serve.
